One of my favourite things about winter squash is cutting through the beautiful green skin to reveal the rich orange flesh inside. Inspired by varieties like Blue Hubbard and buttercup squash, this ribbed dish has a soft, suede-like sage glaze that opens to a delicious pumpkin-orange interior. A tiny Wheaten Marans hen perches on the lid.
Dish measures 3.5” wide x 3.5” tall, 2.5” diameter inside, chicken is approx. 1”
